In the last few years, the food habits and nutritional behaviour of people have changed rapidly in highly industrialized societies of the world. Eating is not only a physical activity but it is also a social, cultural, and economic activity. Changes in socio-cultural factors also bring changes in eating patterns. In contemporary times changes in lifestyle and economic conditions have influenced the consumption of food among people. The dietary pattern describes food that is shared by populations, individuals, or households in specific communities. In recent times a shift towards a more diversified diet has been noticed. These dietary changes both at the global and regional levels go together with considerable health consequences and people also experience nutritional transition. This process of the ‘nutrition transition’ has been facilitated by factors such as trade liberalization, the process of urbanization, and food market policies.
